2018. It has a nice ring to it, don’t you think? Every year, I make a brunch for my family and I to share on January first. I don’t know about you, but that sounds like the perfect way to start off the year. This year, I brought it upon myself to make my brunch 100% vegan. Not an animal product was found on the table. And I loved every single dish.
This year, I put a lot of work into planning the meal and tablescape. A white flower and evergreen branch bouquet was the centerpiece. Fairy-light filled bottles lined up. White flower blossoms scattered the table. Sam Smith trickled into the dining room. I guess perfection really does exist.
Now, the most important part… the food. Not only was the feast mouth-wateringly delicious, it was healthy. Kale-spinach galletes with a whole wheat crust sprinkled with nutritional yeast. Unfortunately, no pictures were taken of this dish because they were snarfed down so quickly. But believe me, they were as beautiful as they tasted. Sweet potato latkes, with beet ketchup and guacamole, was the second dish. And my favorite: baked apple cider donuts. Oh my goodness, they were delicious. The last course was banana “nice cream”. Made with frozen bananas and coconut milk, this tasted just like ice cream (I promise).
