There is just something about a homemade oatmeal cookie that was just taken out of the oven.  Add caramel into the mix… now that is pure bliss.

This is the first recipe I have ever crafted on my own.  Actually, that’s not true.  Once I had the brilliant idea of mixing mint leaves, butter, sugar, and water together.  But that was years ago, so we don’t have to talk about that.

With failed attempts at baking aside, I can assure you that this recipe is a keeper.  I decided to substitute homemade caramel for sugar.  Yep, you heard me.  I creamed  caramel and butter together which paved the way for the best cookie base ever.  You can quote me on that.

I am extremely passionate about food.  Can you tell?

After mixing the caramel, butter, egg, and vanilla together; in came the whole wheat flour.  This choice of flour gave the cookies a nutty flavor that paired perfectly with the caramel.  Baking soda, salt, and cinnamon were then added to the mix.

Next, I folded in the oats and the raisins.  I soaked the raisins in water for an hour to make them more plump (thank you great grandma Eleanor for that tip).

A few cookie scoops later and the baked treats were in the oven!  I had so much fun crafting this recipe.  This is in no means a finished product.  Next time I would probably add a few more pinches of cinnamon, not as many raisins.  That’s the beauty of baking.  As long as you have your base, you can season it to your liking.  Below is the full recipe just in case you want to try these cookies out yourself.

Caramel Oatmeal Cookies

1. preheat oven to 350 degrees.

2. make caramel. in a saucepan over medium heat combine 1 cup of sugar and 3/4 cup of heavy cream. once the mixture turns golden, add 4 tablespoons of butter.  keep stirring the mixture until it thickens into a caramel consistency. remove from heat and cool.

3. cream together 1 stick of softened butter and 1 cup of homemade caramel.

4. mix in 1 egg and a splash of vanilla.

5. add 2 cups of whole wheat flour, 1 teaspoon of baking soda, a pinch of salt, and 1 teaspoon of cinnamon.

6. mix in 1 1/2 cups of oats and 1 cup of raisins

7. scoop dough onto a cookie pan.

8. bake for 15 minutes.

9. and voila. you can now enjoy this delicious treat!
